A few weeks back, Nichole, Kate, Kim, Claudine and I got together to shoot a 4th of July themed picnic on the beach. The three of us dressed up in our red, white and blues and Claudine made all of the food, which was amazing as always! A couple of months ago, I had the pleasure of trying out her Decadent Detox cleanse, which I guarantee isn’t like any other cleanse you have tried. You can learn more about it here and if you don’t actually live in the area to try it out, she also posts the recipes on her blog here! Everything she makes is not only delicious, but also healthy! (a win-win in my book) She’s also sharing the recipes for the cornmeal crust pizza and rice pudding she made for our shoot, both perfect dishes for the 4th! That cornmeal crust pizza is to die for, I could literally eat it everyday. And don’t even get me started on the rice pudding…
Cornmeal Crust Pizza:
2 cups bobs red mill GF biscuit mix (HERE)
1 Cups Corn Meal
1.5 cups unsweetened almond milk and 1/2 cup basil infused olive oil
dried basil, thyme and rosemary (think i did about 1t of each)
Spray pan and bake at 375 for 20 minutes
I put a little oil on top of the crust too while it was baking.
Roast the cherry tomatoes separately (can do this ahead of time)
evoo, salt and pepper
425 for about 15 minutes, toss and roast another 5 or so when crust is done baking…spread pesto (made with walnut pesto) top with ricotta … high in protein :) then the cherry tomatoes you already roasted on top and garnish with fresh basil, parmesan and lemon zest
Rice Pudding:
cook-
1 cup arborio rice
2 cans coconut milk
1 cup water
mix in shredded coconut and sweeten with honey.
